Comfort in a Bowl

Lately I've been craving something a little more comforting than my usual muesli and yogurt for breakfast.  [Just for the record: I've had muesli and yogurt for breakfast for the past fifteen years (whenever I had a say in the matter, that is) and therefore a change was way overdue!]

After some thought I came up with the most delicious, warm, comforting breakfast ever: Wholegrain oats (i.e. steel cut oats - a lot more chewy and nutty than normal rolled oats - a must for this recipe!) cooked in almond milk, topped with cinnamon, organic maple syrup, blueberries and banana.  Yum!

Cooking the oats is a bit time consuming, especially on hectic weekday mornings, but, do yourself a favour and give this a try one weekend.  I made mine as follows:

Comfort in a Bowl

1 cup of steel cut oats;
1 cup of almond milk;
1 cup of water;
A pinch of salt;
1 small sliced banana;
A handful of blueberries;
Cinnamon to taste; and
Organic maple syrup to taste.

Combine the almond milk, water and salt in a small pot.  Add the steel cut oats and bring to the boil.  Turn down the heat and simmer for approximately 30 minutes, stirring occasionally.  Plate up, and cover with banana, blueberries, cinnamon and maple syrup.  Enjoy!
